Curry Toasted Cauliflower

Cauliflower has made a comeback in recent years, so allow us to reintroduce this unassuming relative of broccoli and Brussels sprouts. While available throughout the year, cauliflower’s peak season is the fall, and pairs especially well with earthy fall flavors. Box-grating creates a texture that’s similar to rice, and makes the cauliflower easy to saute and toast up in a hot pan. Rich Indian curry powder, bright and juicy pomegranate seeds, and our very own Chile Pepita Crunch turn a simple head of cauliflower into a decidedly tempting dish. Serves: 2 Guests

–  Whole head of cauliflower

–  1 tsp curry powder

–  Salt and pepper

–  2 oz Emma’s Provisions Chile Pepita Crunch

–  1 pomegranate with quarter of seeds removed

–  1 c whole picked parsley leaves

–  Lemon quarter

–  Oil


Heat a large cast iron pan over medium heat. While pan is heating up, box-grate the entire cauliflower. Add avocado oil to pan, then cauliflower, and season with salt and pepper and stir rapidly. Allow cauliflower to toast in the pan, stirring occasionally to evenly cool. Add curry powder and turn off heat. Add remaining ingredients with a squeeze of lemon, and mix well before serving.
