Together with our Central Texas partners at Pinthouse Brewing, Still Austin Whiskey Co., and Double J Ranch, the Hotel Emma culinary team invites you to join us for a one-of-a-kind event. This immersive “full circle” dinner celebrates the journey of a whole Aberdeen Angus cow from its source at Double J’s Driftwood, Texas property to the plate, highlighting our commitment to sustainability, ethical sourcing, and the fine artistry of butchery.

The evening is dedicated to showcasing the full spectrum of an expertly crafted, meat-driven meal, where every cut of beef tells a unique story.

Guests will be greeted with a house-made consommé, followed by a cocktail hour with passed beef tartare pani puri, beef carpaccio, and beef kushiyaki. After cocktails, various stations will open, featuring smoked briskets, roasted and grilled subprimal cuts, braised meats, raw preparations, and a selection of offal cuts. Locally sourced seasonal vegetables, artisanal sides, and flavor-enhancing sauces will also be served to complement the succulent meat courses.
