The Hotel Emma team collaborated with Chef Oliva to create a Nikkei-style experience, showcasing the distinctive blend of Japanese and Peruvian culinary traditions. Join us for a welcome cocktail and passed appetizers, followed by a multi-course fusion dinner in our private cellars.

Welcome
– Scallop Nigiri: Togarashi, parmesan, batayaki butter
– Chicken Heart Skewer: Umeboshi tare, fermented plum, pickled shallot

Dinner
– Tiradito: Octopus carpaccio, botija mayo, avocado, fried caper chakalaka, wasabi
– Jocoque
– Cebiche: Yellowfin, leche de tigre, hoshigaki, Texas kosho peppers, lotus chip
